I added butterscotch chips last night but didn't let them completely cool and gave myself some wicked bad burns in my mouth and on my tongue

OUCH !!! thats not good…

But..hey,…butterscotch sounds good too….

Heres a quick recipe for a dip…..

FARMGIRL WHITE BEAN DIP

1 15-ounce can organic white beans, such as cannellini (white kidney beans), drained and rinsed

1/2 cup homemade or purchased basil pesto

1/2 cup finely grated Pecorino Romano or other hard Italian cheese

Salt to taste

Combine beans, pesto, and cheese in the bowl of a food processor and whiz until smooth. Salt to taste. Serve with pita chips

I'm all over this Peanut Butter cookie recipe tonight when

I get out of this control room! can't have enough cookies in

How about coconut, toffee bits, cranberries, or even oatmeal….

I may try that next time….3/4 cup of oatmeal and cranberries along with the chips….

What i love about this recipe, its its sooooooo easy…….

I'm glad everyone is enjoying the peanut butter cookie recipe. I just made a batch last night with butterscotch chips. After they come out of the oven I let them cool for 5 minutes before eating. Tonight I'll make 'em with chocolate chips and cocoa powder.

Hope you made those cookies…I made like 2 more batches…

Ok..heres is this mini muffin recipe I promised….now this is very good and easy to make….

Date Nut Minis

makes 24 minis

INGREDIENTS & equipment

3 eggs (beaten)

1 tsp vanilla

½ cup brown sugar (tightly packed)

¾ cup chopped dates

¾ cup raisins

¾ cup grated walnuts

¾ cup Nestlé’s semi-sweet mini-bits

“PAM” – or some sort of cooking/baking spray

2 mini-muffin tins (each holds 12 minis)

Large mixing bowl

Wooden spoon and/or spatula

INSTRUCTIONS

• Pre-heat oven to 350 degrees

• Heavily spray the 2 mini-muffin tins with PAM

• Put eggs, vanilla, brown sugar, dates, raisins, grated nuts, and mini-bits into large bowl and mix/stir well.

• Spoon evenly into mini-muffin tins

• Bake 20 minutes

• Remove from oven and let cool before removing the tins (you may need to use a small knife to loosen from tins).

I'm going to try to make Zen's PB cookie recipe using Nutella in place of the PB. It may not work, Nutella is a little thinner – but we'll see. Nutella with choco chips. /smile.png' class='bbc_emoticon' alt=':unsure:' />

Okay – peanut butter cookie recipe made with Nutella report: Yum. A little sweet because Nutella has sugar. I think the PB is better – but if I did it with nutella again, I might use hazelnuts in it.

CASSAVA CAKE

CAKE MIXTURE

1 PKG FROZEN GRATED CASSAVA

2 LG EGGS

1 CAN COCONUT MILK

1 CAN YOUNG COCONUT MEAT IN SYRUP (OR 1 BOTTLE OF COCONUT STRINGS “MACAPUNO”)

½ STICK OF BUTTER, MELTED

1 CUP MOZZARELLA CHEESE (SHREDDED)

OPTIONAL: JACKFRUIT JUICE (1/4 CUP)

TOPPING

1 CAN OF CONDENSED MILK

½ CAN OF COCONUT MILK

4 PCS OF JACKFRUIT (CANNED), THINLY SLICED

***MAY ADD BROWN SUGAR TO ADD SWEETNESS

DIRECTIONS:

1) PREHEAT OVEN TO 400 DEGREES. DEFROST FROZEN GRATED CASSAVA. MELT BUTTER. WHEN ALL THAWED OUT, MIX EVERTHING TOGETHER. MIX UNTIL MIXTURE IS SMOOTH.

2) POUR MIXTURE INTO A PAN (PAN SIZE DEPENDS ON HOW THICK YOU WANT THE CAKE TO BE).

3) IN A SAUCE PAN, MIX CONDENSED MILK, COCONUT MILK AND JACKFRUIT. STIR OVER MEDIUM HEAT UNTIL WELL COMBINED. LET IT SIMMER AND LEAVE UNTIL IT HAS REDUCED TO ABOUT 80% OF ORIGINAL VOLUME. ***JUST LET IT THICKEN A LITTLE. THEN TURN HEAT OFF AND LET IT COOL.

4) BAKE CAKE UNTIL COOKED (APPROX 45 MINUTES OR TOP PART IS SLIGHTLY BROWN), THEN POUR TOPPING MIXTURE OVER CAKE AND BAKE UNTIL THE TOPPING CARMALIZES TO DESIRED TEXTURE. IF YOU WANT TOPPING AND EDGES CHEWIER THEN LEAVE IN LONGER, JUST KEEP A REAL CLOSE EYE ON IT!

I POSTED THIS ONE OVER IN RANDOMNESS OR SOMETHING BUT THOUGHT I'D ADD IT HERE AS WELL.

3 MINUTE CHOCOLATE CAKE IN A CUP.

INGREDIENTS

4 TABLESPOONS EACH OF COCOA POWDER, MILK, SUGAR AND FLOUR.

SPLASH OF VANILLA EXTRACT

1 LG EGG.

MIX WELL UNTIL SMOOTH THEN MICROWAVE ON HIGH FOR 3 MINUTES…DONE.

IT'LL BE HOT SO YOU MAY WANT TO LET IT COOL FOR A FEW MINUTES BEFORE DIGGING IN

HERE'S SOME HELPFUL HINTS…

- USE A STANDARD SIZED COFFEE MUG

- BE SURE TO PUT IT ON A PAPER PLATE OR SOME OTHER MICROWAVE SAFE DISH, AS THE CAKE WILL RISE

- YOU CAN SPRAY THE MUG WITH PAM IF YOU LIKE FOR EASE OF CLEANING AFTERWARDS

- I HAVE EXPERIMENTED W/WHITE CHOCOLATE CHIPS, MINI MARSHMELLOWS, PEANUT BUTTER/CHOCOLATE CHIPS AND IT WORKS OUT GREAT! BUT IF YOU DECIDED TO USE ANY OF THESE YOU MAY WANT TO DUST THEM W/A LITTLE FLOUR BEFORE ADDING TO THE MIX. FOR SOME REASON THE FLOUR HELPS THE ADD INS STAY IN PLACE AND NOT DRIFT TO THE BOTTOM OF THE CUP.

- I'VE ALSO PUT A DOLLOP OF ICE CREAM ON IT (OF COURSE)

- I HAVE A COWORKER WHO'S GOING TO SKIP THE COCOA MIX AND JUST GO FOR A "VANILLA CAKE"

My problem with recipes is I don't use them, so when people ask me for my recipes I can give them general instructions about how to make something, but I can't give them specific measurements, cooking times, etc. I cook by instinct and eyeball everything. I am an imprecise cook, so I've never really made the same thing twice. Usually it works fabulously. Occasionally we all take a bite, look at one another and say, "Pizza?"
